Cook with Ayden: Stir-Fried Bitter Gourd with Egg
Bitter gourd is one of the healthiest vegetables known to mankind but not many children like to eat it as the name suggests, it can be bitter!
It is a surprise that little Ayden loves eating bitter gourd.
I did not cook bitter gourd throughout big brother Ethan’s growing up years as that boy totally dislikes it. Recently, I was craving for bitter gourd and decided to fry some for myself. Ayden took a bite of it and to my surprise, he actually loves it and requested for more. I ended sharing my plate of bitter gourd with him.
From that day onwards, I fry bitter gourd often at home. I also forced big brother Ethan to eat some and after several times, he starts to develop a liking towards it.
If you want to reduce the bitterness of bitter gourd, rub salt on bitter gourd and leave for a while. Rinse away the salt before cooking.
These days, I can serve bitter gourd for dinner at home and the boys will finish them effortlessly.
Today, I taught Ayden to fry his own bitter gourd. I actually wanted to teach him to fry bitter gourd omelette but he scrambled the eggs instead so yeah please ignore him when he says bitter gourd OMELETTE as that was our initial intention but tak jadi lah
INGREDIENTS:
- bitter gourd
- 3 eggs beaten
- 1 tbsp cooking oil
- 3 cloves garlic chopped
- chicken stock granules
- salt and pepper
METHOD:
- Cut bitter gourd to half (length-wise) and scoop out the seeds. Slice bitter gourd thinly.
- Break eggs into a bowl. Add salt and pepper and whisk eggs.
- Heat oil in pot and stir fry garlic until fragrant.
- Add bitter gourd slices and stir fry over high heat for about 2-3 minutes.
- Add chicken stalk granules and stir.
- Once the bitter gourd has soften, pour the beaten egg slowly over the bitter gourd slices.
- Stir fry until the egg is cooked and dry.

Does he eat bitter gourd? I am impressed!!! I never touched that when I was a kid but now I love it!!!
He loves it! We usually add-on bitter gourd for noodles too (if available) when we dine out.

I love stir fried egg with bittergourd too. I don’t cook that often at home as my kids not really enjoy it. Sometimes I cook stuffed bittergourd soup at home. Good for warm day as bittergourd has cooling properties.
Yes I’m really surprised that Ayden loves bittergourd and now because of him, Ethan eats it too. So yeay to them both :D

Aww, glad you love them. We are just spending time together at home doing things he loves as this boy is home-schooled so we have ample of time to explore stuffs.
I prefer scrambled eggs to omelette so yay for Ayden. Good that both of them like to eat bitter gourd now.
Actually me too, hehe. The elder brother Ethan will only eat the eggs if he has a choice but I will usually make him eat some bitter gourds too :D
