Stir-Fried Mixed Vegetables with Oyster Sauce
Do your children eat vegetables? Mine do not eat leafy types but are okay with okra, broccoli, corn, carrot and those sort.
One sure way to cook these vegetables so they’ll polish them clean is to stir-fry with oyster sauce with lots of mushroom and occasionally adding ‘baby eggs’ as the boys simply love those.
Stir-Fried Mixed Vegetables with Oyster Sauce
Ingredients:
Baby Corn
Broccoli
Cauliflower
Shimeiji Mushroom
Quail Eggs
Prawn
Carrot
Capsicum
Garlic
Shallot
Corn Flour
Oyster Sauce
Oil
Method:
1) Heat oil in wok.
2) Stir-fry quickly the prawns until pink and remove.
3) Sauté garlic and shallot until fragrant
4) Add carrot, broccoli, baby corn, shimeiji mushroom, cauliflower and capsicum.
5) Add in oyster sauce.
6) Add a bit of water.
7) Cover and let it simmer for a while.
8) Mix cornflour with water.
9) Add cornflour mixture.
10) Add quail eggs and prawns.
11) Stir until thickens.
12) Serve
This dish never fails to excite the boys. I am thankful though they don’t eat leafy vegetables, at least they love these.Â
