Bake with Ayden: Steamed Banana Cupcakes
We love bananas. It is one of our favourite local fruits. Banana is KING when it comes to nutrition. It is power-packed with essential vitamins and minerals such as potassium, calcium and many more. Potassium helps to maintain a healthy balance of fluids in the body and as an electrolyte, potassium stimulates nerves and muscles throughout our body.
I eat banana everyday before going for my evening jog. Last week, it rained almost every evening deterring us from going to the playground hence we had many bananas lying around. To quickly use them up, Ayden steamed cupcakes with these extra bananas.
Steamed Fluffy Banana Cupcakes
Ingredients:
2 bananas (about 200g)
2 eggs
70g sugar
150g self-raising flour
1 tsp baking powder
1 tbs oil
Method:
1) Sift flour and baking powder.
2) Whisk egg and sugar until fluffy.
3) Mash bananas and add into the egg and sugar mixture
4) Add flour
5) Add oil
6) Scoop into tea cups
7) Steam for 15 minutes
We also discovered something new regarding bananas that day. Ayden found that a banana makes a FANTASTIC mic!

Yes, he has definitely improved. That is our main purpose of doing this. It is part of his learning process. It trains him to be eloquent and expressive and at the same time, works on his motor skills too :)
The colour of the steamed cakes look nice. Well done Ayden! Now I also learn to use bananas to sing.
I was advised to use over ripened soft bananas which made the steamed cakes very fragrant and darker brown. Just my 2 cents.
Yes that is true. Using over riped bananas will definitely give better results in cakes. Those are the sweetest and ‘bestest’ bananas :D
