Nyonya Chap Chye Recipe (Vegetarian Dish)
Unlike Loh Hon Chai (refer to my entry here) where red bean curd is used, the Nyonya Chap Chye calls for the use of Taucu (minced bean paste) instead. This is an extremely simple dish to prepare and the hint of sweetness goes well with kids.
Ingredients:
- oil
- garlic, chopped
- 1 tablespoon minced taucu
- onion, sliced
- white cabbage
- carrot
- dried mushrooms, soaked and sliced
- dried lily buds (kin chiam), soaked; cut off the hard tips and tie each strand into a knot
- dried bean curd skin (tau kee), soaked
- tanghoon (glass noodles), soaked until pliable
- water
- Sugar and salt
Method:
Heat oil. Fry garlic and onion until golden. Add taucheo and fry until fragrant.
Add carrot. Once the carrot is soft add the rest of the ingredients and stir-fry well.
Add water. Cover for 5 minutes. Season with salt and sugar.

i always use the red bean curd…tak pernah try with tauchu…good to know that :)

i prefer the one with red bean curd :) it tastes better with slightly higher saltiness :P

oh yumms…thanx for the recipe. godma made it when she was alive…either with taucu or the red beancurd. was her staple dish that she would definitely cook each time i return for dinner. she passed away but never shared teh recipe…i am so glad you shared it with me. thanx nyonya merryn *hugs*
