Little Chefs | Roast Chicken with Plum Sauce

It’s the 5th day of Chinese New Year and we are back at home but are still very much into the Chinese New Year mood.

Today, our Little Chefs tried roasting for the very first time. Since we are still in CNY atmosphere, the ingredients used for our roast are also very much CNY influenced.

The Little Chefs roasted delicious chicken drumsticks with plum sauce.

Plum sauce is one of the most important ingredients for the Chinese community especially for Yee Sang. This sauce represents stronger ties with family and friends and is often poured all over a dish while saying out, “Tian Tian Mi Mi” which means, “Sweet and loving relationships”.

I also take advantage to showcase my Corelle Plum Dinnerware we bought more than a decade ago before moving into our then new house. These have been sitting in my kitchen cabinet since we moved in as they are too precious for daily use but because PLUM sauce is the spotlight of our dish today, they are given the opportunity to get some fresh air and airtime on my blog :lol:

Chicken drumsticks roasting in the casserole.

Here’s the recipe for the boys’ roast chicken with plum sauce:

ROAST CHICKEN WITH PLUM SAUCE

8 pcs chicken drumsticks

Marinate:
1 tbs Oyster Sauce
1 tbs Light Soya Sauce
1/2 tsp Sesame Oil

Sauce:
2 tbs Oil
4 cloves Garlic
3 tbs Plum sauce
2 tbs Ketchup
2 tbs Oyster sauce
Black Fungus
Tomatoes
Water

Method:
1) Marinate chicken with oyster sauce, light soya sauce and sesame oil for at least an hour.
2) Roast chicken in preheated oven at 220C for an hour.
3) Meanwhile, fry chopped garlic until fragrant. Add black fungus and tomatoes.
4) Add plum sauce, ketchup, oyster sauce and water.
5) Bring to boil.
6) Simmer until sauce thickens.
7) Spoon sauce over roasted chicken and serve with steamed corn and broccoli.

    Every time I watched your boys cooking and baking, I would think it was so easy but when I got inside the kitchen, my wife would shoo me out! She would offer to bake or cook whatever I want so that I don’t mess up her kitchen. Adoi…! Ha-Ha….
