Cook with Ayden: Stir Fried Shimeiji Mushroom with Carrots
Little Ayden attends preschool in the afternoon session this year. That means I have to cook a quick yet wholesome lunch for him before he heads to school. I usually have less than an hour to dish out a complete meal so whatever is quick works best.
Ayden loves mushrooms. Shimeiji mushrooms is one of his favourite. There are many ways to cook this mushroom but I always stick to this one on week days as it can be dished out in lightning speed. Furthermore it has carrots in it. Carrot is good for our eyes.
We were just chilling at home yesterday as it was a Sunday and the Daddy needs to do some repair and maintenance work on our house. Since we have time to spare, I guided Ayden to cook this quick and easy dish using our multi cooker.

Ingredients:
200g shimeiji mushrooms
1 carrot (sliced thinly)
4 cloves garlic (chopped)
2 tbsp oyster sauce
1 tsp light soy sauce
1 tsp sugar
1 tbsp oil
Method:
Heat oil.
Add garlic and stir-fry until fragrant
Add carrot and cook until soft
Add shimeiji mushroom, oyster sauce, soy sauce and sugar and keep stirring until mushrooms are brown and well coated with sauce
Dish out and serve
Note: We used Saute/High Temperature mode on our multi-cooker to cook this dish

His preschool has two sessions. The morning session is English medium while the afternoon session is Chinese medium to prepare the kids into SJKC next year

I always loved all mushrooms especially mushroom soups.
Sadly I developed allergy towards big black mushrooms since last year.
I would get sudden rashes on both arms after eating them.
