Cook with Ayden: Chicken Curry
Chicken Curry
I’ve always thought chicken curry is difficult to cook. I love my mom’s chicken curry. I think it is the best in the world
I never bothered to learn how to cook it until recently as the boys can now tolerate spicy food.
Today, my mom taught me how to cook her delicious chicken curry through Whatsapp and Little Chef Ayden is going to show us how it is done.
Ingredients:
4 chicken drumstick
25g meat curry powder
2 potatoes
1 garlic (sliced)
An inch ginger (sliced)
1/2 bowl santan
1 bowl water
2 stalk serai
Curry Leaf
Pound together:
1 red chili
3 shallots
Belacan
Method:
1) Marinate chicken with sliced garlic, ginger and curry powder for at least an hour.
2) Heat cooking oil. Saute pounded ingredients.
3) Add ginger and garlic.
4) Bruise serai and add in.
5) Add chicken, curry powder and potatoes.
6) Add water.
7) Let boil until chicken is tender and potatoes are soft.
8) Add coconut milk and keep stirring until it comes to a boil.
9) Turn off fire and serve.
If using Philips All-In-One Cooker:
1) Select ‘Saute / High Temperature’
2) Add cooking oil.
3) Saute pounded ingredients.
4) Add ginger and garlic.
5) Bruise serai and add in.
6) Add chicken, curry powder and potatoes.
7) Add water.
8) Close the lid. SEAL.
9) Select ‘Meat/ Poultry’ and PRESSURE COOK for 15 minutes
10) Once done, turn the valve to VENT and wait for the floater to go down.
11) Open the lid.
12) Select ‘Saute / Low Temperature’
13) Add coconut milk and keep stirring until it comes to a boil.
14) Serve

I so malas. These days, I just use instant curry paste, fast to cook, nice to eat. A1 Mountain Globe brand is my choice, very very nice.
Can we get this brand here? If yes, I may try it one of these days.
But then again, I find cooking using curry powder as in my post not very difficult and much cheaper too.
Chicken curry with serai tastes extra nice. Ayden knows more and more dishes now thanks to mommy.
I am thankful Ayden is adventurous when it comes to food. He is also very interested in cooking so it is a win-win situation for us both :)
Wow! Ayden can really cook well. And the boys take curry!! Wish my kids can tolerate spicy food. Haha.
Your curry recipe look easy. Not too many ingredients. I seldom cook curry because of the ingredients and time.
This is considered very mild. If my mom cook will be spicier.
My boys used to complain spicy but now they are used to it already much to my delight :D

Hehe. Thank you. I have to make it simple otherwise little chef will have a tough time cooking. That is why the food you see is also at its simplicity with no decor whatsoever.
Boys/men way of cooking must be simple yet delicious, correct? :D
I’m a lazy woman, I only cook cury chicken from ready-to-cook package :P
Hi, can I check if you used quick release to release the pressure?
If you have the time, do not release the pressure manually, but if you are in a hurry, you can quick release the pressure. Just remember to cover the valve with a cloth before you release it.
