Cook with Ayden: Ayam Pongteh Pressure Cooker
Several months ago, big bro Ethan shared with us how to cook this famous Peranakan dish – Ayam Pongteh. Big bro Ethan cooked it the conventional way – on the gas stove.
Earlier this month we got ourselves a new toy, the new all-in-one cooker by Philips. It comes with sauté function as well as pressure cook (among many other functions) so we tried to cook Ayam Pongteh in it to see if it will turn out good. It not only turned out good, it turns out fabulously!
The best is, it took less than 30 minutes to whip out this dish that usually requires at least an hour or more on the stove.
Ingredients:
6 Chicken Drumsticks
2 Potatoes
4 Chinese Mushrooms
2 Tablespoon Tauchu
1 Teaspoon Dark Soy Sauce
2 Teaspoon Gula Melaka
5 Shallots (Pounded)
5 Cloves Garlic (Pounded)
Method (all-in-one cooker way)

1) Select ‘Sauté High Temperature’
2) Press START
3) Add in oil
4) Fry garlic and shallot
5) Once fragrant, add in taucheo
6) Fry for a while. Add in chicken
7) Stir
8) Add mushroom and potato
9) Stir again
10) Add gula melaka and dark soy sauce
11) Stir
12) Add water
13) Cover the pot
14) Set the valve to ‘SEAL’
15) Go to ‘Pressure Cook’
16) Select ‘Meat/Poultry’
17) Press START
18) Once done, wait till the steam is released or manually release it by turning the valve to ‘VENT’
19) Wait until the floater drops before opening the lid
20) Serve
However, if you don’t have a pressure cooker, here is the conventional way to cook Ayam Pongteh:
1) Pound shallots and garlic
2) Slice mushrooms
3) Heat oil in wok
4) Fry garlic, onion and tauchu
5) Once fragrant, add in chicken
6) Add mushroom and potatoes
7) Add water
8) Add gula melaka and dark soya sauce
9) Let it simmer
No wonder the mummy group I am in speaks highly of pressure cookers. It really makes life easier. I used to be afraid of pressure cookers but the one I am having is really user friendly. We boiled red bean tongsui the other day. It took only 30 minutes to get melt-in-the-mouth beans. No prior soaking required. I can so get used to this
I think I should get myself one too, a pressure cooker.
Pressure cooker is a lifesaver in kitchen.

Sounds so convenient to use. Does it use a lot of electricity? Ethan can cook many different dishes with this pressure cooker now.

Is black bean same with tauchu?

No. Black bean is not the same as tauchu. Tauchu is preserved fermented yellow soybeans. It is usually sold in bottles. Hope this helps.
My pressure cooker doesn’t have the saute function? (SHARP pressure cooker) Can I just throw everything in at once?
