Cook with Ayden: Ayam Satay Buah Keras
A couple of weeks ago my mom and I did a live Peranakan cooking demo at The Straits Hotel and Suites, Melaka. One of the dish we cooked is Ayam Satay Buah Keras.
Today, Ayden cooked the same dish at home but instead of using the wok, he used the rice cooker because he is too young to be handling a wok and a gas stove. If you wish to try cooking this dish, do use the wok and cook until the gravy gets thicker and chicken becomes tender. Add salt to taste.
Like all Nyonya recipes, everything is just ‘agak-agak’. I never dare to ask my mom the exact measurements for the ingredients used unless you want to be smacked with her spatula. That is why even though I know the exact ingredients used in a particular dish, I can never get it done as good as my mom’s. This is what they call, “Tak boleh lawan tauke”
Ingredients:
6 Chicken drumstick
5 Buah Keras (Candlenuts)
Belacan (Shrimp Paste)
2 Cili Merah (Red Chili)
6 Bawang Merah (Shallots)
3 Serai (Lemongrass)
4 Daun Limau Purut (Kaffir Lime Leaves)
Kunyit (Turmeric)
Method:
1) Blend buah keras, shrimp paste, red chili, shallots, lemongrass and turmeric until they formed a paste
2) Pour paste into a wok
3) Add chicken and daun limau purut
4) Cook until the paste has thicken
5) Add salt to taste
