WORLDFOODS Yellow Curry Recipe

I’ve mentioned numerous times that the long school holiday means being extra busy in the kitchen whipping out one pot wonders for the family. Why one pot? Because having a 15 months old toddler with me limits whatever time I can spend in the kitchen so I try to cook only fast and convenient food for them without compromising on the quality and nutrition of the food.

Simple Mac and Cheese recipe for kids

One of my ‘speciality’ is this simple non-baked Mac and Cheese. I’ve cooked this so many times until Darling got scared of it. Thinking about cheese scares him already. The boys love it but not Darling. I guess any adult will get tired of eating the same thing day in, day out.

Ethan has started to love curries. He stayed away from spicy food when he was younger but now that he is in school and most of his classmates boast how they can down an entire bowl of curry noodle, he starts eating curries too. That motivates me to want to cook curry for my family but I never know how. I’ve never cook curry, okay? It sounds complicated until I received an early Christmas present from a foodie friend.

WORLDFOODS

I received a hamper of WORLDFOODS sauces. There is Thai Turmeric Lemon Grass Marinade, Thai Basil Chilli ‘Pad Ki Mao’ stir-fry sauce and Thai Yellow Curry Paste. Awesome-sauce!

I was very excited to try cooking the Yellow Curry as I’ve always wanted to cook curry so eventhough it was almost midnight when we got home, I proceeded to quickly prepare the ingredients and cook just so I can sleep happily knowing if it is a success or not.

I got all the ingredients laid out and ready to cook. Cubed chicken, green pepper, carrot, potato, coconut milk and the yellow curry paste.

I heat a tablespoon of oil (since all WORLDFOODS paste has no added oil in them) in a pot over medium heat. Add 3 tablespoon of curry paste and cook, stirring until fragrant.

Add carrots and green pepper and continue stirring for another 3 minutes or so.

Add potatoes and chicken.

Stir for another 5 minutes.

Add coconut milk, reduce heat to a simmer, stirring occasionally until potatoes are soft.

Lovely isn’t it? The entire house is filled with lingering curry aroma that both Ethan and Darling just can’t wait to dig in.

Serve with a bowl of fragrant rice topped with fresh basil from my garden. I love basil and I have a big pot of it in my garden.

Gone are the days when I need to slave in the kitchen for hours to dish out a hearty meal. Now that cooking tasty yet healthy meals is hassle free, I’m sure I’m going to cook more often. After all, nothing beats having a hearty home-cooked meal with the family at the comfort of our own home.
