Best of Malaysia: Nyonya Cuisine by Chef Debbie Teoh

Chef Debbie Teoh returns to Chatz Brasserie PARKROYAL Kuala Lumpur with her authentic Nyonya delicacies through buffets and interactive cooking classes starting from 5 September to 12 October. Chef Debbie Teoh will be preparing authentic Nyonya flavours through buffet dinners and hi-teas.

Ayam Buah Keluak

Ayam Buah Keluak is the star of the show. A true Peranakan delicacy, Buah Keluak is an Indonesian Black Nut with a hard shell, which contains a black creamy paste with a unique taste.

Buah Keluak

Dig the flesh out and mix it with your rice or eat it on its own. Some says its an acquired taste but it was love at first taste for me when I first tasted it many years ago. I like to drench my rice with the gravy, add the flesh of the buah keluak, mix it using my fingers and EAT! Yums! So much satisfaction there!

Pais Buah Keluak

Pais Buah Keluak

This time, Chef Debbie will be introducing Pais Buah Keluak, similar to otak-otak but is made from keluak paste. It is available as an a la carte order at RM30 nett for two pieces.

Though I’m a Nyonya, this is my first time eating this and I love it. If you are too lazy to dig out the flesh from buah keluak, this is definitely for you. Smooth, creamy with a slight spicy feel, I had it on its own (though it was recommended to eat it with steamed rice).

Perut Ikan

Gulai Perut Ikan

Another addition to the a la carte menu is Gulai Perut Ikan, a fish stomach dish fermented by Chef Debbie herself. It is priced at RM35 nett per bowl, inclusive of steamed rice.

Hu Pio Soup

Hu Pio Soup

This soup is from Penang as prawn balls (made from scratch) are used. The Malacca ones uses fish cake if I’m not mistaken.  Other ingredients includes fish maw, carrots and cabbage. A delicious and nutritious soup, Ethan gladly dried up his bowl without me needing to force him.

Nasi Ulam

Nasi Ulam

Steamed rice dish mixed with various herbs will definitely whip up your appetite for more.

Ju Hu Char

Ju Hu Char

An authentic Nyonya dish, this stir fried salad is to be eaten wrapped in lettuce leaf. Best eaten with sambal belacan added, you won’t stop at one. Be prepared to be wanting for more.

Ayam Pongteh

Melaka Ayam Pongteh

Heh! This is one I can proudly say I can whip out in my kitchen! A popular Nyonya dish that is popular with the kids as well as adults, I learned from my mom how to cook this as Ethan simply love it. He loves drizzling the mixture of sweet and salty gravy on his steamed white rice.

It’s also one of the simplest Nyonya dish to cook. The rest of the dishes here requires tremendous amount of work I can’t even imagine me cooking them. Salute to Chef Debbie for cooking up a storm for us tonight!

Kerabu Jantung Pisang with Prawns

Kerabu Jantung Pisang with Prawns

Served with many prawns this can be a stand alone dish. As Chef Debbie says it, most of the dishes here is good to be served alone with a bowl of steamed white rice as they are a complete dish on their own.

Lemak Nanas Ikan Sepat

Lemak Nenas Ikan Sepat

A typical Nyonya dish which is fruity, creamy and a little spicy. Rich in coconut milk, I love eating this with some home-made sambal belacan.

Talam Cendol

Talam Cendol

Deliciously done, they disappeared off the shelf in seconds!

Rempah Udang

Rempah Udang

Chef Debbie’s rempah udang is so beautifully crafted, it’s a piece of art!

Kuih Kasui

Kuih Kosui

I’m still dreaming of these doink doink kuih kosui. Soft and springy I think they are just perfectly done!
