Sweet and Sour Prawn Recipe
I have more time to spare in the kitchen now that Ethan is attending kindergarten. Ethan loves sweet and sour fish while Darling loves sweet and sour crab but I’ve never tried cooking sweet and sour prawns before until several days ago. This is the outcome. Very yummy with lots of gravy to drench the rice.
Ethan and I love our rice to be wet so I deliberately cook up extra gravy.
Sweet and Sour Prawn
This can be a standalone meal as I used quite a lot of vegetables in it namely:
Cucumber
Carrot
Tomato
Spring Onion
Lettuce
Marinate the prawns lightly with salt.
Heat up a pan, add some oil and once the oil is hot enough, fry the prawn very quickly. I fried it in under a minute. It’s okay to undercook the prawns at this stage as we will be tossing them back into the gravy later. If you cook them too long now, it will have a rubbery texture later.
Remove prawns.
Brown some chopped garlic, sliced onion and ginger until fragrant. I added a teaspoon of chili paste at this stage just for kicks.
Add the carrot first. It takes the longest to soften. Add the rest of the vegetables. Add some chicken stock, ketchup, sugar, soy sauce and vinegar. Let boil.
Once boiled, taste it and when you get the right sweet and sour consistency add some diluted corn flour. Once thicken, toss the prawns back in making sure they are nicely coated with the gravy.
Serve with steamed rice.
You may want to add some cut pineapples too. We love pineapples but so happens I did not have it that day :(
