Red Bean & Black Glutinous Rice Dessert Recipe
Darling told me the other day he often drops by Kedai Kopi Khoong in Sea Park in the evenings alone for dessert. He brought me there for the very first time in 1997 and is still frequenting that place today! I don’t know what makes him kept going back there as I find their desserts so-so only -.-
How? Am I that bad that he needs to ‘cari makan’ else where? :P
So the other day, I boiled some red bean and black glutinous rice dessert specially for HIM ^_^
Ingredients:
Red Bean
Black Glutinous Rice
Palm Sugar
Screwpine/Pandan leaves
Method:
1) At night, in a slow cooker, add red beans, black glutinous rice, water and pandan leaves. Bring to boil.
2) Next morning, in a separate pot, add palm sugar (gula melaka), water and pandan leaves. Bring to boil.
3) Strain the palm sugar before adding into the red bean and black glutinous rice broth.
4) Serve hot or cold.
Darling, Ethan and I had this for breakfast the next morning. I used palm sugar instead of rock sugar as palm sugar gives this dessert a rich chocolatey kick. Combined with the gluey texture of glutinous rice, this is just the PERFECT dessert of LOVE! :)
Sometimes I love adding store bought glutinous rice balls too. I’m just too lazy to roll my own balls.
He came home early in the evening to have some more of this. I’m the happiest person on Earth right now as for now, I managed to make him skip his Kedai Kopi Khong dessert time! :P
Health benefits:
Red beans is one of the richest foods in antioxidants, even richer than blueberries or cherries. Frequently consumption of red beans help your body fight free radicals and reduces the risk of cancer or other serious diseases.
why must separate cook the gula melaka? cannot boil them together?
