22. Meals in a flash…
Sometimes I do not have much time to cook as Ethan is NOT always so obedient to be sitting on the floor whilst I cook away. Sometimes he is being naughty and will not let go of my leg. That is the time I call for desperate measures… to cook a complete meal in a flash!
Today happens to be the day he is naughty. I had to change my menu at the very last minute.
1) Steam chicken
Bite sized chicken pieces
Pounded garlic
Tauchu
A knot of pandan leaf
Mushroom
Originally this dish requires some chopped up Red Hot Chilly Peppers, but since Ethan is going to dig in, I’ve decided to eliminate the RHCP and add in some mushroom for the extra flavor. Just dump everything into a bowl and put into a steamer. Place the steamer on rapid fire for 30 minutes. Whoa… rapid fire! Sounds like I am in a battle field or something… He he..
2) Blanched Kailan

Pounded Garlic
Oyster Sauce
Oil
Blanch the Kailan in boiling hot water (add some oil into the water) and drain. Put under running cold water immediately to maintain the colour. Arrange the Kailan onto a plate. In a wok, heat up some oil and brown the garlic and oyster sauce. Pour the gravy onto the Kailan.
3) Banana Egg

Big Onions
Break a couple of eggs into a bowl. Season with salt and pepper. Whisk it! Beat It! (Beat it! Beat it! Singing to the tune of Michael Jackson’s famous song!). In a wok, heat up some oil, fry the onions. Add in the sliced banana and pour the egg over it. Fry until brown. For all the roti pisang and roti telur lovers out there, you’ll definitely love this dish as this is all about the pisang and the telur minus the sinful guilt of the oil laden roti!
We always finish our meals with a glass of Honey Lemon. Refreshing and simply delicious, it is Ethan’s favourite drink too!
I prepared those meals in just 30 minutes… Talk about being a Superwoman! Phew… Life Is A Roller Coaster! (Me being musically crazy today… ;p)
