Cook with Ayden: Making Your Own Chicken Essence

I used to use the fire stove to make chicken essence for the boys. You can read my tutorial on how to make chicken essence the traditional way.

Today, Little Chef Ayden will be sharing how to make chicken essence using the pressure cooker. It is much easier and faster this way. We use our Philips All In One Cooker so we have the option of either making it really fast using the pressure cooker function or boiling it slow and steady using the slow cook function. We choose to do it fast this time.

Ingredients:
Whole chicken or cut chicken parts (fat and skin removed)

I usually use black chicken to make chicken essence but today we use antibiotic-free chicken as Little Ayden asked too many questions regarding the black chicken until I don’t know how to answer him. I shall get back to him on that a little later :lol:

Remove all visible fats and skin. Use a pestle to crush the chicken bones. The more you crush, the more essence you’ll get.

Place a small bowl (upside down) inside a bigger bowl. Arrange the crushed chicken on it. Cover with a lid.

Place a cloth in the pressure cooker pot. Put the bowl of chicken in it.

Pour water into the pot (not the bowl) making sure the water level reach at least half the height of the bowl.

Put the lid on and select MANUAL. Set the cooking time to 59 minutes (or more if you wish).

Once done, remove the chicken. The essence is collected underneath the small bowl.

We did not add any seasoning at all yet the boys drank it up like a champion. It is tasty as no water is added. What we get is purely essence from the chicken.

    Wonder if my first comment in or not. Never mind, I can comment here again. Haha.

    I was saying I Never make own chicken essence or any essence before. I know this technique but never try. Shall make one some day. I got few farm frogs from my sis when visited her in Sibu last week. She asked me to use this technique to collect the frog essence.

    I have slow cooker. Use the same technique but take longer time, right??

      Yes the same technique is used for slow cooker. I’d use slow cooker too if I have the time.

      I told Ayden you have some farm frogs that you are planning to extract the essence and Ayden’s small eyes suddenly opened so wide! LoL!

    The chicken essence must have a very, very, very strong chicken taste. Do you use male, female, matured or very young chicken – does it matter? After getting the essence from the chicken, do you still eat the chicken meat?

      I’m not particular on male, female, matured or young chicken. I just make sure the chicken is antibiotic free chicken. I stir fry the meat with vege after that.

        Good that you do not waste the chicken meat because I know some people will just throw the meat away after boiling soup or getting the essence out. :)

          I find it too wasteful to just dispose them off like that. They are still good to be eaten and goes really well with stir fried veges. Some people boil soup with it.

    Muahahahahahaha!!! Frogs? No, thank you! Black chicken? Eyewwwwwww!!!! Oh! I can cook this recipe without using the pestle. I dunno how to chop chicken so once I am done, all the bones would be crushed already. LOL!!!

      Hahaha. Same with me! I don’t know how to chop chicken too so normally I’ll get them to chop for me before bringing it home.

    My sister buys dozens of chicken essence to drink everyday. I wonder why she doesn’t make her own. Saves money and more nutritious.

      Maybe she doesn’t have a pressure cooker? Back in those days I had to boil this on the stove and it takes a very long time. I boiled it for at least 3 to 6 hours. Now with my pressure cooker, it can be done in just an hour. We never buy chicken essence anymore since we get this pressure cooker.

    Can I ask why do we need to place a piece of cloth inside the pressure cooker? Does it mean like soaking the cloth in water in pressure cooker?

      Yes, it means soaking the cloth in water and we do that so that the pot don’t get scratched.

    Hi, may I know where you bought the bowl with the lid? I tried to find an appropriate bowl that can fit inside the pot but they are either too big or too small.
