Quick and Easy Egg Mayo Sandwich

Ethan’s class is now in the morning session. I have successfully been waking up early at 5am for 3 days to prepare his snack box but overslept today so he ended up bringing bread and cereals to school. He is happy though as he is able to share the cereals with his friends. 

Not only do I have to prepare his snack box, I also prepare tea break now that he is at home in the evenings. I love it that he is in the morning school session. He has more time to spend at home with us now. 

Today’s tea break is the quick and easy egg mayo sandwich.

Just two boiled egg and a tablespoonful of mayonnaise. 

Mash the eggs. 

Mix well with the mayonnaise until creamy. 

Ethan loves having his egg mayo with cheese so I always added cheese and cucumber for him.

Ayden on the other hand, doesn’t like to have anything added into his egg mayo sandwich so I let him have it as it is without the cheese and cucumber.

    I didn’t boil egg but using rice cooker to cook the egg. You will notice the egg cook in the way just nice and softer. Just place a kitchen tissue and wet your egg put inside rice cooker and cook.

      I heard of this method of cooking egg too but I have never try it. How long does it take to boil an egg in the rice cooker via that method?

    I love egg sandwiches. Just had that this morning. I added cheese instead of mayo and a bit of butter to make it creamier. What cucumber is that, so small…not the usual wide slices? You planted your own, is it?

      Eh no, I did not plant that cucumber. It is Japanese cucumbers that looks like zucchini. Oooh, cheese and butter. Will try that one of these days :D

    I agree with Ayden… Don’t let anything interfere with the goodness of the eggy filling! XD My mum also makes similar egg sandwiches, but not so mushy/much mayo :P Used to get a kick out of random salty bites because of the coarse salt, haha

    A good hearty sandwich for growing boys. If I eat this mayo, egg, cheese sandwich I will surely balloon up in noo time at all so no no for me.

    I also like to make egg mayo sandwich for my daughters, only first week of school, I made two times already. I didn’t add cucumber and cheese too. Only egg, mayo, salt and pepper.

    I also don’t like cucumbers in my egg mayo sandwich. I don’t mind the cheese though. :P

    I get Sam to have the food catering provide by the school canteen, let’s see if she like the food. If she doesn’t then I have to prepare food for her recess time, more to tea break actually (she’s in afternoon class)
