Rice Cooker Cake: Moist Banana Cake

I love baking cakes using my rice cooker. I find that the cakes retain their moisture better compared to oven-baked ones. 

After all the successful cakes I baked using my rice cooker, I thought it will be a breeze baking a moist banana cake but I was wrong. It took me 4 attempts before I can finally publish this post as I don’t want to be one of those who published false recipes and ending up wasting other people’s time and effort in baking an unsuccessful cake. 

My first attempt resulted in a cake too dense so I tried another recipe the next day and got it quite right but still it was lacking something so I tried again the next day and this time it was without milk. The cake was delicious but it turned out to be dry. So I guess milk is a must to get a moist cake. 

Today, I looked through all the 3 recipes that I’ve tried, mix matched and came out with this:

Super moist rice cooker banana cake 

Delicious moist banana cake baked using a rice cooker.

Ingredients:

220g self-raising flour
140g sugar
2 eggs (lightly beaten)
115g butter
4 bananas
1/2 tsp baking soda
20ml milk

1/2 tsp banana flavouring (optional)

Method:

The big brother helped to mix butter and sugar until smooth while the little boy helped to mash bananas in a separate bowl :D

Add eggs (one at a time) and mix on low speed.

Add mashed bananas and mix.

Add flour and fold well.

Lastly add milk.

Grease the rice cooker pot with butter and add batter.

The cake is done in 45 minutes.

This moist banana cake is really delicious. It is so moist and bursting with banana goodness.

My boys love this moist banana cake very much. They can finish the entire cake in a day!

I can’t believe how beautiful her cake turned out. How come mine doesn’t have those visible strands? Sobs.

Anyway, she used multi purpose flour+salt+baking powder to replace self raising flour. She also uses normal sugar and not brown sugar yet her cake still turns out so beautiful.

      What I meant is when I post a recipe, I make sure it is something simple enough that any ‘normal’ person (not pro baker or anything) can do it and also it must work. Only that way I can gain my readers’ trust to want to bake more and more with me :)

      My boys love the Moist Chocolate Cake and this Moist Banana Cake so it vanishes quickly :D I’m thinking about cheesecakes now coz that is also their favourite. Hmm…

    Hello there..I tried your rice cooker moist chocolate cake recipe, and it turned out yummy! Just one question though, ine i put the cake batter and turn the rice cooker on, within 10 minutes it switched from cooking mode to warm mode..then i had to manually hold the switch down to cooking mode in order for the cake to be cooked..did u encounter this?

      Hi Neesha,
      It’s great that the cake turned yummy but I did not encounter what you did as my rice cooker has a ‘cake’ function hence it will bake for 45-50 min and automatically turn to OFF after.

    So delicious! Both your sons will be baking great cakes to impress girls later on. I like heavy bits in the cake so that I can taste the banana. Did your reader use the same type of bananas as you did? Perhaps the type of bananas you used will not give you the visible strands.

      I guess so. I asked her what bananas she used but she doesn’t know. Just like how I don’t know what banana I used! LoL! But I posted the picture of the banana I used on FB and a reader informed me that mine is Pisang Berangan :)

    This recipe is so easy and more improtabtly, it works ! I tried it for the first time and it turned out yummy. I had used unsalted butter and normal sugar. Perhaps I will try salted butter and brown sugar next time round. Thank you so much.

      Hi Diane. Glad you love it. So happens today we baked this too but this time we used a real oven as we just bought one over the weekend. We used normal sugar too as we ran out of brown sugar :D
