Baked mooncake skin recipe

We are privileged to be invited by Resort World Genting and Nuffnang to spend a day up in Resort Cafe, Genting to learn making mooncakes and also to sample their wide variety of mooncakes.

We are even more privileged when the Chef shared with us his recipe for baked mooncake skin.

Ingredients for the skin:

750 gram flour
600 gram golden syrup
150 gram oil
15-20 gram alkaline water

Combine flour, golden syrup and oil. Lastly add alkaline water and mix the ingredients well. Wrap the dough in plastic wrap and set aside for at least 3 hours.

The amount mentioned in the recipe above is good to make about 50 balls for the mooncake skin. Please take note that the smaller ball is for the skin while the bigger ball is the filling.

Sprinkle some flour into the mooncake mold and knock any access out.

Once you have wrapped the mooncake filling, place it into the mold.

Press the ball of dough and filling firmly.

Knock the mold once on one side.

Knock again on the other side to loosen it from the mold.

Knock the mold down once and the mooncake should be out.

Ethan shaped his very first mooncake today and you can imagine how happy and proud he is ^_^

After baking, the mooncake looks quite nice I dare say!

He cut it the first thing when we arrived home.
