My modified version of Steam Banana Cake in Tea Cups

From my first attempt at steaming banana cake in tea cups, Darling commented that it lacked the ‘banana kick’! He said it tasted kind of bland. So I brain storm the whole nite and came out with my version today.

What I encountered yesterday was my cake was a little bit heavy and not as fluffy. So what I did today was suppose to reduce the oil to a teaspoon but because of Ethan’s constant distraction, I totally forgot to add in the oil! So my cake was oil-less today, but I find it just fine!

I also substituted the water to orange juice instead. The juice really enhance the banana flavour and now my Tea Cup cake is so fluffy and delicious! I am satisfied with this version but now wonders if I should add in the oil next time….

I did only half of the original portion, so I came out with only 2 tea cups today.


Today’s recipe

1 ripe banana
Half an egg
1 tablespoon orange juice
1 teaspoon baking powder
2 tablespoon sugar
50g flour

Double or triple the amount as you wish. I’ve got to go now. Time to indulge in my tea cup cake… :P
