25. Chicken Eggroll

My Darling loves chicken meat. He doesn’t eat beef, doesn’t like mutton, definitely not a fan of duck meat, on the border line when it comes to pork but loves chicken and fish. So when I am working out the menu for tomorrow’s dishes, I’ll have to make sure I have either chicken or fish in it. For today’s menu, I have Chicken Eggroll as the main course. Here goes…

Ingredients:
2 eggs
Minced meat (Can easily be substituted with minced burger meat if you wish)
A teaspoon of chopped garlic and onion
Optional:
Finely chopped carrot to be mixed into the minced meat (I try to sneak in more nutrients as Ethan shares the same dish with us)

Crack 2 eggs into a bowl and season with salt and pepper. Whisk it. In a wok, heat up some oil. Fry the egg into beautiful omelette. Remove.

Add a tablespoon of oil into the wok. Brown some garlic and onion. Brown the minced meat. I usually add in a tablespoon of ketchup into the minced meat and mix it well before frying to ensure that the meat doesn’t clump and stick to each other during the frying process. Once brown and fragrant, remove and place on the omelette. Roll it. Slice it. Garnish with ketchup and some stir-fried veges for a beautiful and delicious meal. Enjoy!
